Spinach Artichoke Dip

This is one of my favorite appetizers to make for a party. I always serve it right out of the oven, nice and warm. The only problem is it gets devoured so quickly I hardly get to eat any Spinach Artichoke Dip.

I got this recipe from a Food Network calendar I got for Christmas one year. The last time I made it with frozen spinach instead of fresh spinach and didn’t notice a difference. I also use Neufchatel cheese as a substitute to cream cheese because I believe it’s a little healthier. If you want to use cream cheese this spinach dip will taste just as good. This is best served warm with tortilla chips, crackers, or even Pita wedges.

This recipe calls for a couple squirts of hot sauce and this is where you need to be a little careful. I like really spicy food. I’m talking habanero peppers dipped in Dave’s Insanity Sauce hot. My wife and kids don’t like food this spicy, and even though the Neufchatel cheese has a cooling effect, too much hot sauce will ruin this dish. So if I’m making this for my family or a party I’ll add just a very small squirt of Sriracha sauce, but if you want something with more of a kick in the pants then use more hot sauce.
