Lemon and Coconut Truffles

If you’ve been following this blog you’ve heard me mention that my wife really likes coconut. That means I need to have coconut recipes on hand, ready to go at a moment’s notice. Coconut recipes like these Lemon and Coconut Truffles; that combine the flavor of coconut with the brightness of lemon, sweetened with honey and the crunch of almonds.

Lemon and Coconut Truffles This is a healthy dessert because it uses honey instead of sugar. The only fat in this recipe is coconut oil, an ingredient I’ve never used before making this dessert. This is also a no bake dessert, something that’s really attractive in the summer when you don’t want to turn your oven on.

I started this recipe by adding coconut flakes, almonds, honey, and coconut oil into my food processor and blending it for about a minute. Because I only have a mini food processor I had to do this in three batches. I added all three batches of the coconut mixture to a large mixing bowl and stirred it all together. The next step was adding lemon zest and juice from one lemon.

Lemon and Coconut Truffles I was nervous about adding the lemon because I already liked the taste of the coconut mixture with the honey and almonds. I’m glad I added the lemon though because it added a nice burst of citrus that didn’t overpower the coconut flavor. I scooped the mixture out of the bowl by the tablespoon and laid them on a baking sheet lined with wax paper. Once I was done I rolled each piece into a ball using the palms of my hands.

The final step for the dessert is rolling each truffle in coconut. I spread another cup of coconut on a plate, then rolled each ball around until it was covered. That’s it, no baking required! I probably could have served the Lemon and Coconut Truffles at this point, but I decided to put them in the refrigerator for a couple hours, just to firm up.
