Beef and Spinach Pie

Last week I published a recipe for a Homemade Pie Crust so it’s probably no surprise that this week I want to give everyone a recipe for that crust. This is a savory recipe with a filling of beef, spinach and mushrooms with cheese melted on top.

I started my Beef and Spinach Pie with my Homemade Pie Crust. The crust can be made beforehand, but in my case I had just got done putting it together, so I put it in the refrigerator until I was ready to use it.

The next thing I did was preheat the oven to 400F and brown the ground beef with some chopped onions and sliced mushrooms. Then I used my garlic press to add three cloves of garlic. With a wife who’s part Italian I feel like I’m always using the garlic press. When the ground beef was fully cooked I drained the excess oil and transferred it to a large mixing bowl where I added spinach, Worcestershire sauce, Dijon mustard, Parmesan cheese, and some salt and pepper.

The next thing I did was prepare the cheese topping. The first thing I did was melt a few tablespoons of butter in a saucepan, then I whisked in a couple tablespoons of flour and milk. I cooked the milk mixture for a couple minutes before I whisked in half a cup of Parmesan cheese.

In a separate bowl I beat two egg yolks then added the milk and half of the cheese mixture. After that I whisked it together. Then I added the cheese mixture with the eggs back into the saucepan and whisked it over a medium heat for another two minutes until it thickened up. Once it did, I removed it from heat.

At this point I was ready to put the pie together and get it in the oven. I stirred three eggs into the meat and spinach mixture and spread that into my pie crust. Then I covered the meat and spinach mixture with the cheese topping. I carefully slid the pie into the oven for about thirty minutes.

You’ve probably noticed that in a lot of my recipes I use fresh garlic. The way I incorporate the fresh garlic cloves is by using a garlic press. I have two garlic presses in my kitchen and this one is my favorite. The reason I like this one so much is because it’s made of stainless steel with soft non-slip handles, and I know I’m not going to break it. I also like this one because it’s easy to clean.

I mentioned that I have two garlic presses in my kitchen and the Good Cook Touch Garlic Press was half the price of my other one that I have broken. This is one of my essential tools in the kitchen and this is the one I recommend.
